Basic Chia Seed Pudding Recipe

Looking for a quick, easy, healthy, minimal prep breakfast recipe that could double as a snack? Did we mention your kids might love it too? No, it's not a bar or smoothie. It's chia seed pudding! Chia seed pudding is loaded with antioxidants, protein, fiber, and healthy omegas. There are tons of ways to flavor your chia seed pudding to your liking and get creative with unique flavor profiles.

There are two main ingredients you need to make chia seed pudding: chia seeds and milk, be it a nut milk or dairy milk. A good rule of thumb is 2 tablespoons of chia seeds for every half cup of milk. There are endless options for toppings and add-in mixtures you can throw in or on top of your chia seed pudding. Fruits, granola, protein powders, nut butter, cinnamon, cold brew coffee, and even matcha powder can all be mixed in or added on top of your pudding.

To get you to try out this amazing breakfast or snack we are including all the ingredients and a recipe for a basic vanilla chia seed pudding and we'll leave elevating this recipe up to you.

Vanilla Chia Seed Pudding

  • 4 Tablespoons chia seeds
  • 1 cup unsweetened almond milk (or any other milk you prefer)
  • ¼ teaspoon vanilla extract
  • Stevia or monk fruit sweeten to taste (option to use maple syrup or honey)

In a mason jar or air-tight Tupperware, add chia seeds, milk, vanilla extract, and the sweetener of your choice. Stir all the ingredients together and place the lid on the container. Give the mason jar or container a good shake and place it in the refrigerator for 1-2 hours (preferably overnight). The chia pudding should be nice and thick like a pudding and not watery or runny. If it's not thick enough, just add more chia seeds (about 1 Tablespoon), stir, and refrigerate for another 30 minutes or so.

Remember, you can top your chia seed pudding with things like fruits, granola, nut butters, coconut flakes, and more. As well as mix in protein powders, matcha powder, cold brew coffee and so much more as you are preparing this recipe to really elevate this pudding.
